These burritos are my husband’s creation, and they’ve become a favorite at our house. The recipe is simple, with very few ingredients, so they’re economical and easy to make. And you can have them on your table in no time. Enjoy! – JM Farro
JOE’S BLACK BEAN BURRITOS
1-15.5 oz. can Black Beans (with liquid)
1 medium Onion (chopped)
Olive Oil
Shredded Cheese (American, Cheddar, or Monterey Jack)
Flour Tortillas (whole wheat or regular)
Pour enough olive oil into pan to coat the bottom. Sauté the chopped onion until slightly brown.
Add beans (with liquid) to pan, and cook until heated through. (Do not overcook.)
Pour into bowl or casserole dish, and cover with shredded cheese. Let sit for one or two minutes.
Warm tortillas according to package directions. Wrap beans in tortillas and enjoy!
Options: When you serve these burritos, you can also add fresh chopped tomatoes and/or shredded lettuce.
Note: Joe likes to use whole wheat tortillas and fat-free shredded cheese, and these burritos are still delicious!
