I got this recipe from my friend, Donna, many years ago, and it makes a sensational soup. If you’d like to make it a bit lighter, you can substitute light cream for the heavy cream. Either way, it’s delicious! – JM Farro
BROCCOLI SOUP
3 tablespoons Butter
1 large bunch of Broccoli, chopped
2 cups Onions, chopped
2 medium Potatoes, chopped
6 cups Chicken Broth
1 cup Heavy Cream
Salt & Pepper to taste
Cook the chopped onions in 3 tablespoons of butter.
Add one bunch of fresh chopped broccoli together with the chopped potatoes.
Add 6 cups chicken broth, salt and pepper. Simmer until vegetables are tender.
Puree in blender and return to pot. Add one cup heavy cream. Serve hot.
